The microclimate in this region, between the Mediterranean Sea and the snow-capped peaks of the Pyrenees, lends a surprising quality to this olive oil. Why do we harvest our olives so early? The taste can easily be called sensational: a mild olive oil does not get any fruitier than this. That was also the judgement of the official, ten-member tasting jury of the Catalonian Department of Agriculture, recognised by the International Olive Oil Council, whom we invited to test our Novello olive oil. Olive oils rarely receive higher than a 6 for fruitiness, but also its peppery taste and sweetness scored very high. Those are all authentic Arbequina properties.
These days, first-class restaurants in particular are demanding much more from the taste of olive oil, and we at Can Solivera are happy to cater to that need. Indeed, we have decided never to compromise on the taste (quality) of the oil, and we are eager to share the fine results of that with you. We call this our PREMIUM quality oil but charge only 12% more for it than for our 100% Arbequina olive oil. As only a very limited supply of this PREMIUM oil is available to us, we can only offer a limited amount to each customer---as long as the supply lasts!

This oil is obtained from very carefully cultivated and partially handpicked olives from the young Arbequina olive trees that grow in our most northern olive grove in Spain, located near La Bisbal in the Catalonian region of 'Baix Empordà'. We harvest there as early as we can, by mid-October if possible. By mid-November, we already have this olive oil in bottles. It is extracted by means of the double-centrifuge method and left unfiltered to prevent any loss of taste. That way, it retains the most fruitiness.
